Jackfruit Crepe Rolls

Delicate rice-flour crepes wrapped around a warm jackfruit, coconut, and jaggery filling. A sweet, tropical treat with hints of cardamom. This is a Sanjeev Kapoor exclusive recipe.

Ingredients 

  • 1 cup ripe jackfruit, finely chopped
  • ½ cup rice flour
  • ½ cup refined flour (maida)
  • Salt to taste
  • ¼ cup scraped fresh coconut
  • ¼ cup jaggery (gur) grated
  • ½ teaspoon green cardamom powder
  • Oil for drizzling and greasing

Method

  1. Take rice flour in a bowl. Add refined flour, salt and some water and whisk to make a semi-thick batter.
  2. Heat jackfruit in a non-stick pan. Add coconut and jaggery, mix and cook for 1 minute.
  3. Add 1 tablespoon of water, mix and cook till the jaggery melts. Add cardamom powder and mix.
  4. Heat a non-stick pan. Grease with some oil and pour a ladleful of batter and swirl to make a thin disc. Drizzle some oil on top and roast from both sides till golden. Use up the remaining batter similarly.
  5. Transfer on individual serving plates, put some jackfruit mixture on one side of the disc and wrap.
  6. Serve hot.
