History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for JALJEERA SORBET - skk Recipe

  • Roasted cumin seeds 4 tablespoons

  • Fresh coriander leaves a handful

  • Fresh mint leaves a handful

  • Ginger chopped 1 1/2 inch

  • Tamarind pulp 1 1/2 tablespoons

  • Black salt to taste

  • Salt to taste

  • Castor sugar 4 tablespoons

  • Asafoetida 1/2 teaspoon

  • Lemon juice 2 tablespoons

  • Fresh mint sprigs to garnish

  • Lemon slices to garnish

Method

Step 1

Blend together cumin seeds, coriander leaves, mint leaves, ginger, tamarind pulp, black salt, salt, 2 tablespoons castor sugar, asafoetida and lemon juice. Add little water and blend into a smooth paste.

Step 2

Transfer into a jug, add some more water and remaining castor sugar and mix well. Pour this mixture into ice trays and freeze till set.

Step 3

Demould the jal jeera cubes into a blender jar and blend t till smooth. Transfer into individual serving bowls, garnish each with a mint sprigs and a lemon slice and serve immediately.
