Karnataka cuisine comprises of many vegetarian and non-vegetarian dishes that are full of flavour and taste. It is one of the oldest surviving cuisines and its origins can be traced back to the Iron Age. 
The varieties in Karnataka cuisine have influenced the neighbouring states like Tamil Nadu, Andhra Pradesh, Kerala and Maharashtra. The cuisine also reflects influences from these four neighbouring states on its food habits. 
Being a coastal state, coconut is grown in abundance. Needless to say coconut in its various forms like oil, milk, fresh and dried coconut is put to excellent use in its cuisine.

Ingredients for Hulianna Masala-SK Khazana Recipe

  • Split Bengal gram (chana dal) 1/4 cup

  • Split skinless black gram (dhuli urad dal) 2 tablespoons

  • Green cardamoms 4

  • Cloves 4-5

  • Cinnamon broken 1 inch

  • Cumin seeds 1 teaspoon

  • Fenugreek seeds (methi dana) 1 teaspoon

  • Dried red chillies 4-5


Step 1

Dry roast Bengal gram and black gram, one by one, till browned. Transfer into a bowl.

Step 2

In the same pan, dry roast cardamoms, cloves, cinnamon, cumin seeds and fenugreek seeds and roast for 2 minutes. Add dried red chillies and roast till fragrant. Transfer into the same bowl.

Step 3

Mix and let them cool down to room temperature.

Step 4

Transfer the mixture into a grinder jar and grind to a coarse powder.

Step 5

Cool completely and store in an airtight container to use as required.
