Ingredients list for Hearty Egg Bites
- 2 Eggs hardboiled
- 1 tablespo for shallow frying Oil
- 1 small Onion finely chopped
- 1 medium Carrot peeled and grated
- 7-8 French beans stringed and finely chopped
- to taste Salt
- to taste Crushed black peppercorns
- 1 tablespoon Cornflour/ corn starch
- ½ cup Bread crumbs
Method
- Heat 1 tablespoon oil in a non-stick pan. Add onion, carrot, French beans, salt and crushed peppercorns and sauté on medium heat for 4-5 minutes. Transfer in a bowl.
- Grate in eggs; add salt, crushed peppercorns and cornflour and mix. Add breadcrumbs and mix till well combined.
- Divide the mixture into equal portions and shape them into round tikkis.
- Heat some oil in a non-stick tawa.Shallow-fry each tikki from both sides till golden. Drain on absorbent paper.
- Serve hot.
