Ingredients list for Grilled Balsamic Chicken
- 200 grams Boneless chicken breast
- 1½ teaspoons Balsamic vinegar 1 tablespoon +
- to taste Salt
- to taste Crushed black peppercorns
- for garnishing Fresh thyme 6-7 +
- 4 teaspoons Garlic chopped
- 2 teaspoons Olive oil ½ tablespoon +
- 7-8 Button mushrooms stalks removed
- 1 small Red bell pepper deseeded and cut into triangles
- 1 small Yellow bell pepper deseeded and cut into triangles
- 1 small Broccoli separated into florets and blanched
- ½ teaspoon Castor sugar (caster sugar)
- 7-8 Basil leaves
Method
- Place chicken breasts on a plate. Add salt, crushed peppercorns, thyme leaves, 2 teaspoons chopped garlic, 1 tablespoon balsamic vinegar and ½ tablespoon olive oil and rub well.
- Heat 1 teaspoon olive oil in a non-stick grill pan. Place the marinated chicken breasts on it and grill till grill marks appear on both the sides.
- Remove the chicken on a worktop and cut into juliennes.
- Heat remaining olive oil in the same pan. Add remaining garlic and sauté till golden.
- Add mushrooms, both the peppers and broccoli and grill till charred.
- Add 1½ teaspoons balsamic vinegar and castor sugar and toss well.
- Chop basil leaves and add along with the chicken juliennes, salt and crushed peppercorns. Toss well and grill for 2-3 minutes.
- Garnish with thyme sprigs and serve hot.
