Ingredients list for Green Tomato Salsa
- 4 medium Green tomatoes
- as required Olive oil
- to taste Salt
- 1 small Onion ,finely chopped
- 1 teaspoon Green chillies ,finely chopped
- 1 tablespoon Fresh coriander leaves ,finely chopped
- a pinch Castor sugar (caster sugar)
- 1/2 Lemon
- to serve Corn chips
Method
- Preheat oven to 200° C.
- Cut tomatoes into roundels.Grease a baking tray with some olive oil, place the tomato roundels on it, brush some olive oil over them and sprinkle some salt on top.
- Place the tray in the preheated oven and roast for 15-20 minutes. Remove the tray from the oven and let the tomatoes cool.
- Put the roasted tomato roundels on the worktop, chop them and transfer into a bowl. Add onion, green chillies, coriander leaves, salt and castor sugar. Squeeze the juice of ½ lemon juice into the bowl and add 1 teaspoon olive oil and mix well.
- Transfer into a serving bowl and serve with corn chips.
