Ingredients
- 1/4 medium broccoli, separated into small florets
- 1 medium green capsicum, cut into thin strips
- 1 large cucumber, halved and sliced diagonally
- 8-10 French beans, sliced diagonally and blanched
- 3/4 cup bean sprouts
- 6 lettuce leaves, torn and chilled
- 1 stalk spring onion greens,sliced
- 1 tablespoon roasted sesame seeds
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 3 teaspoons powdered sugar
- 7-8 black peppercorns, crushed
- Salt to taste
Method
- Blanch the broccoli florets in boiling water. Refresh in cold water. Mix together the ingredients for the dressing and set aside.
- Place the broccoli, capsicum, cucumber, French beans, bean sprouts and lettuce in a large bowl. Pour the dressing over the salad and toss well to mix.
- Serve, sprinkled with the spring onion greens and roasted sesame seeds.
