Ingredients list for Gamberi Aglio E Olio
- 28-30 Prawns shelled and deveined
- 2 tablespoons Garlic
- 1 medium Yellow zucchini
- to taste Salt
- 1 teaspoon Crushed black peppercorns
- 8 Cherry tomatoes
- 1 tablespoon Garlic finely chopped
- 1 Green chilli finely chopped
- 1/3 cup Grated green zucchini
- 1/3 cup Yellow zucchini grated
- 8-9 Basil leaves
- 6 tablespoons Tomato sauce
- 2-3 Lollo rosso leaves
- Dressing
- 3 tablespoons Olive oil
- Juice of 1 lemon
- to taste Salt
- ¼ teaspoon Crushed black peppercorns
Method
- Heat 1 tbsp olive oil in a non-stick pan.
- Cut yellow zucchini into thin slices vertically. Add salt, ½ tsp crushed peppercorns, 1 tsp olive oil and rub the slices well.
- Place slices in the pan and grill, flipping, for 2-3 minutes on each side. Remove from heat and place on a plate.
- Halve cherry tomatoes. Add garlic and 1 tbsp olive oil in the same pan and sauté for 1 minute.
- Add prawns, salt, remaining crushed peppercorns, green chilli and halved cherry tomatoes. Toss and add grated green and yellow zucchini, 3-4 torn basil leaves. Toss again and sauté well.
- Add tomato sauce, mix well and cook till prawns are done.
- To make dressing, combine lemon juice, salt, crushed peppercorns and olive oil in a bowl and whisk well.
- Place grilled zucchinis on a serving plate. Tear Lollo rosso leaves and place on it. Drizzle the dressing on top and put 2-3 basil leaves on it. Place cooked prawns on it, garnish with remaining basil leaves and serve immediately.
