Ingredients list for Gajar Tamatar Pulao

  • 1 1/2 cups Basmati Rice
  • 2 medium Carrots 1/2 inch cubes
  • 2 medium Tomatoes chopped
  • 1 Bay leaf
  • 1 inch stick Cinnamon
  • 2 Black cardamoms
  • 1 inch piece Ginger chopped
  • 7-8 Sambhar onions
  • to taste Salt
  • 6-7 Curry leaves
  • 2 teaspoons Raisins
  • 1/2 teaspoon Black peppercorns crushed
  • 1 cup Tomato puree
  • 1 teaspoon Lemon juice
  • 2 tablespoons Fresh coriander leaves chopped

Method

  1. Soak rice in three cups of water for half an hour. Drain and set aside. Heat a non-stick pan and dry roast bay leaf, cinnamon and black cardamoms. Add ginger, sambhar onions, chopped tomatoes, carrot cubes and salt. Sauté for two to three minutes.
  2. Add three cups of water and stir. Bring to a boil and add curry leaves, drained rice, raisins, black peppercorns and tomato puree, stirring gently continuously. Mix in lemon juice and chopped coriander leaves. Cover and cook on low heat till done. Serve hot.
