How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Gajar Tamatar Pulao Recipe

  • Basmati Rice 1 1/2 cups

  • Carrots 1/2 inch cubes 2 medium

  • Tomatoes chopped 2 medium

  • Bay leaf 1

  • Cinnamon 1 inch stick

  • Black cardamoms 2

  • Ginger chopped 1 inch piece

  • Sambhar onions 7-8

  • Salt to taste

  • Curry leaves 6-7

  • Raisins 2 teaspoons

  • Black peppercorns crushed 1/2 teaspoon

  • Tomato puree 1 cup

  • Lemon juice 1 teaspoon

  • Fresh coriander leaves chopped 2 tablespoons

Method

Step 1

Soak rice in three cups of water for half an hour. Drain and set aside. Heat a non-stick pan and dry roast bay leaf, cinnamon and black cardamoms. Add ginger, sambhar onions, chopped tomatoes, carrot cubes and salt. Sauté for two to three minutes.

Step 2

Add three cups of water and stir. Bring to a boil and add curry leaves, drained rice, raisins, black peppercorns and tomato puree, stirring gently continuously. Mix in lemon juice and chopped coriander leaves. Cover and cook on low heat till done. Serve hot.
