Ingredients list for Gajar Halwa Mousse
- 2 cups Carrots (gajar) grated
- 1 1/2 cups Milk
- 2 tablespoons Ghee
- 1/4 cup Sugar
- 1 teaspoon Green cardamom powder
- 1/4 cup Mawa / Khoya grated
- a few Saffron strands
- 6-8 Pistachio blanched, peeled and sliced
- 1 cup Whipped cream
Method
- Heat ghee in a non-stick pan, add carrots and sauté for five minutes. Add milk and cook till all the milk evaporates and the carrots are cooked.
- Add sugar and mix well. Add cardamom powder, mawa / khoya and saffron and mix again. Remove from heat and cool down to room temperature.
- Reserve some pistachios and add the remaining to the gajar halwa.
- Reserve one-fourth of the gajar halwa and mix the rest with whipped cream. Pour the mixture into a piping bag and pipe out in shot glasses.
- Put the reserved halwa on top of each glass and garnish with reserved pistachios. Refrigerate for one to two hours.
- Serve chilled.
