By Sanjeev Kapoor 08 Mar 2019 in Recipes Course New Update Main Ingredients Carrots (gajar), Milk Cuisine Fusion Course Desserts Prep Time 1.30-2 hour Cook time 21-25 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Veg Ingredients list for Gajar Halwa Mousse 2 cups Carrots (gajar) grated 1 1/2 cups Milk 2 tablespoons Ghee 1/4 cup Sugar 1 teaspoon Green cardamom powder 1/4 cup Mawa / Khoya grated a few Saffron strands 6-8 Pistachio blanched, peeled and sliced 1 cup Whipped cream Method Heat ghee in a non-stick pan, add carrots and sauté for five minutes. Add milk and cook till all the milk evaporates and the carrots are cooked. Add sugar and mix well. Add cardamom powder, mawa / khoya and saffron and mix again. Remove from heat and cool down to room temperature. Reserve some pistachios and add the remaining to the gajar halwa. Reserve one-fourth of the gajar halwa and mix the rest with whipped cream. Pour the mixture into a piping bag and pipe out in shot glasses. Put the reserved halwa on top of each glass and garnish with reserved pistachios. Refrigerate for one to two hours. Serve chilled.
