Fresh Apple Salsa

Ingredients 

  • 3 Washington apples (Red Delicious)
  • 2 tablespoons lemon juice
  • 1/2 small bunch fresh coriander leaves
  • 1/2 small bunch fresh parsley leaves
  • 1 large onion, finely chopped
  • 1 green chilli, finely chopped
  • Salt to taste
  • Crushed black peppercorns to taste
  • Toasted baguette slices to serve
  • Lemon wedge to garnish
  • Fresh coriander sprig to garnish

Method

  1. Finely chop Washington Apples and transfer it into a large bowl. Add lemon juice and mix well.
  2. Finely chop coriander leaves and parsley leaves and transfer both into the same bowl.
  3. Add onion, green chillies, salt and crushed black peppercorns and mix well. Set aside for 1 hour.
  4. Transfer the salsa into a serving bowl and place it on a serving platter. Place toasted baguette slices on the platter, top them with some salsa. Garnish the salsa in the bowl with a lemon wedge and coriander sprig and serve immediately.
