Fish fillets marinated in green chutney, wrapped in aluminium foil and cooked on a tawa. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Fish in Foil

  • 400 grams Fish fillets boneless fish, cut into 2-inch pieces
  • 1/2 cup Fresh coriander leaves roughly chopped
  • 10 Garlic cloves
  • 1 teaspoon Red chilli flakes
  • to taste Salt
  • 1 tablespoon Lemon juice
  • 4 Aluminium foil sheets

Method

  1. Grind the coriander leaves, garlic, red chilli flakes, salt and lemon juice into a fine paste with two tablespoons water. Transfer into a bowl.
  2. Add the fish pieces and marinate for ten to fifteen minutes.
  3. Place four aluminium sheets on a worktop and put equal quantity of the marinated fish in them. Bring the edges together and seal to make envelopes.
  4. Heat a non-stick tawa, place the envelopes on it and cook on medium heat for two to three minutes. Turn over and cook for two to three more minutes.
  5. Serve hot in the envelopes itself.
