Ingredients list for Figalicious Pudding
- 14 Seedless dates chopped
- 4-5 Dried figs chopped
- 1/2 teaspoon Baking soda
- 85 grams Refined flour (maida)
- 1 teaspoon Baking powder
- 1/2 cup Walnuts chopped
- 200 grams Sweetened condensed milk
- 1/2 cup Nutralite
- 1/2 teaspoon Vanilla essence
- 8-10 Almonds slivered
- 1/2 cup Milk
- For custard sauce
- 2 1/2 tablespoons Custard powder
- 2 1/2 cups Milk
- 4 tablespoons brown sugar/jaggery
- For garnish
- 1 Figs quartered
Method
- Preheat the oven to 150°C/300°F/Gas Mark 3.
- Boil the dates and figs in a quarter cup of water with baking soda, stirring continuously. Set aside to cool.
- Sift the flour with baking powder into a bowl. Add the date-fig mixture along with the walnuts and mix well.
- Take the condensed milk and Nutralite in a bowl and whisk to blend well. Add the flour mixture and vanilla essence and mix well.
- Transfer the mixture into two greased ramekin moulds. Sprinkle the almond slivers and bake in the preheated oven for about fifty minutes. To check if the pudding is done insert a knife, if it comes out clean the pudding is ready.
- Remove the pudding from the oven and let it cool for ten minutes. Heat the milk and pour over it.
- To prepare the custard sauce, mix the custard powder with half a cup of milk. Heat the remaining milk in a pan. Add the brown sugar and stir till it dissolves. When the mixture comes to a boil, add the custard powder mixture and cook stirring continuously till the mixture thickens and coats the back of the spoon.
- Pour the sauce over the pudding, top with two pieces of fresh fig and serve it warm.
