Drunken Potatoes

Ingredients 

  • 4 large potatoes
  • Salt to taste
  • 2 medium onions
  • 5-6 button mushrooms
  • 5 tablespoons olive oil
  • 1 tablespoon butter
  • 2-3 garlic cloves 
  • 2 teaspoons refined flour (maida)
  • 1 cup red wine
  • 1 1/2 tablespoons tomato puree
  • 1/2 teaspoon black pepper powder

Method

  1. Peel potatoes and halve them. Trim the sharp edges to soften them. Cook them in 3 cups of water with salt.
  2. Roughly chop onions and mushrooms.
  3. Heat 1 tbspolive oil and butter in a non stick pan, add onions and sauté. Finely chop garlic and add.
  4. Add mushrooms and continue to sauté for 4-5 minutes.
  5. Add refined flour and mix well and sauté for 2 minutes.
  6. Add red wine and cook. When the potatoes are done, drain all the water and let them dry a bit.
  7. Add remaining oil and pan-roast the potatoes on high heat.
  8. Add tomato puree, salt and black pepper powder to the sauce and mix well.
  9. Add the sauce to the potatoes and cook on low heat till the sauce permeates the potato pieces and thickens.
  10. Adjust salt and pepper powder and serve hot.
