Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Doodhi ni Kheer Recipe

  • Bottle gourd (lauki/doodhi) 1 medium

  • Ghee 2 tablespoons

  • Khoya/mawa ¼ cup

  • Milk 1½ cups

  • Sugar Free Natura Sweet Drops 4

  • Almond slivers 1 tablespoon

  • Pistachio slivers 1 tablespoon

  • Green cardamom powder 1 teaspoon

Method

Step 1

Hollow bottlegourd reserving for serving and grind the pulp to a coarse paste. Transfer in a bowl.

Step 2

Heat ghee in a non-stick pan, add ground paste and khoya and sauté till ghee separates.

Step 3

Add milk and Sugar Free Natura Sweet Drops and mix well. Cook on medium heat for ten minutes. Add almond and pistachios and mix well.

Step 4

Transfer the kheer in the hollowed bottlegourd, garnish with pistachio and almonds and serve immediately.
