History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Doodhi Halwa Recipe

  • Bottle Gourd 500 grams

  • Milk 3 cups

  • Pure ghee 3-4 tablespoons

  • Sugar 1/4 cup

  • Cashewnuts chopped 10

  • Pistachios chopped 10

  • Green cardamom powder 1/2 teaspoon

  • Vermicelli coloured tablespoons

Method

Step 1

Peel gourd, scrape out the seeds. Grate it finely. Heat milk and reduce to around two cups.

Step 2

Heat ghee in a pan, add the grated gourd and sauté for five to seven minutes.

Step 3

Add reduced milk and cook, stirring continuously, till all the liquid content has evaporated.

Step 4

Add sugar, cashewnuts and pistachios and green cardamom powder.

Step 5

Cook till the sugar dissolves and the mixture is semi dry.

Step 6

Serve hot or cold garnished with coloured vermicelli.
