Ingredients list for Dhaniya Paneer Kabab
- 500 grams Cottage cheese cut into 1 inch cubes
- 1 tablespoons Coriander seeds
- 1 teaspoon Cumin seeds
- 1 inch Ginger
- 3-4 cloves Garlic
- 1 cup Fresh coriander leaves roughly chopped
- 2 Green chillies
- to taste Salt
- 1 Lemon
- 2 tablespoons Hung yogurt
- 5 tablespoons Extra virgin olive oil
- a few Cherry tomatoes
- few Onion rings
- few Lemon slices
- few Red capsicum thin strips
Method
- Grind together coriander seeds, cumin seeds, ginger, garlic, fresh coriander leaves, green chillies with a little water to a fine paste.
- Transfer into a bowl, add salt, juice of 1 lemon and mix well. Add hung yogurt and mix well. Add 2 tbsps extra virgin olive oil and mix well.
- Add cottage cheese cubes and mix well and set aside to marinate for 15 minutes. Heat the remaining extra virgin olive oil in a non stick pan. String cottage cheese cubes and cherry tomatoes alternatively on skewers and place them in the pan.
- Cook, rotating the skewers from time to time, till the cottage cheese gets cooked evenly all around. Serve hot garnished with onion rings, lemon slice and thin strips of red capsicum.
