Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Deconstructed Vada Pav Recipe

  • French baguette , toasted with butter till golden 8 slices

  • Oil 1 teaspoon

  • Mustard seeds 1/2 teaspoon

  • Curry leaves 5

  • Ginger-garlic-green chillies-coriander leaves paste 1 1/2 tablespoons

  • Turmeric powder 1/2 teaspoon

  • Sweet potatoes , boiled, peeled and roughly chopped 5-6 medium

  • Salt to taste

  • Green chutney as required

  • Vada pav chutney as required

  • Salted boondi 1 cup

  • Chives , halved to garnish


Step 1

Heat oil in a deep non-stick pan, add mustard seeds and curry leaves. Once the mustard seeds splutter, add ginger-garlic-green chilli-coriander leaves paste, mix and saute on medium heat till oil separates.

Step 2

Add turmeric powder and mix well. Add sweet potatoes and mix well. Add salt and sauté for 1 minute. Switch the heat off.

Step 3

Place 2 baguette slices on a worktop. Spread some green chutney over them. Sprinkle vada pav chutney on top. Spread some cooked mixture in a dome shape on top.

Step 4

Take boondis in a bowl and roll the prepared bread slices, upside down, in it till well coated with boondi. Make more deconstructed vada pavs in the same way.

Step 5

Arrange these deconstructed vada pavs onto a serving platter, garnish with chives and serve immediately.
