Ingredients
- 8 slices of French baguette, toasted with butter till golden
- 1 teaspoon oil
- ½ teaspoon mustard seeds
- 5 curry leaves
- 1½ tablespoons ginger-garlic-green chilli-coriander leaves paste
- ½ teaspoon turmeric powder
- 5-6 medium sweet potatoes, boiled, peeled and roughly chopped
- Salt to taste
- Green chutney as required
- Vada pav chutney as required
- 1 cup salted boondi
- Chives, halved for garnish
Method
- Heat oil in a deep non-stick pan, add mustard seeds and curry leaves. Once the mustard seeds splutter, add ginger-garlic-green chilli-coriander leaves paste. Saute on medium heat till oil separates.
- Add turmeric powder and mix well. Add sweet potatoes and mix well. Add salt and sauté for a minute. Switch off heat.
- Place 2 baguette slices on a worktop. Spread some green chutney over them.
- Sprinkle vada pav chutney on top. Spread some cooked mixture in a dome shape on top.
- Take boondis in a bowl and roll the prepared bread slices, upside down, in it till well coated with boondi. Make more deconstructed vada pavs in the same way.
- Transfer deconstructed vada pavs on a serving platter.
- Serve immediately, garnished with chives.
