Curried Mushroom Khari

Ingredients

  • 1 tablespoon curry powder 
  • 2 cups chopped button mushrooms
  • 16-20 kharis
  • 1 tablespoon olive oil 
  • 1 teaspoon cumin seeds (jeera)
  • 1-2 green chillies, finely chopped 
  • 1 tablespoon chopped garlic
  • 1 medium onion, finely chopped 
  • ½ teaspoon dried fenugreek leaves (kasuri methi)
  • Salt to taste 
  • 2 tablespoons grated processed cheese
  • 2 tablespoons grated parmesan cheese
  • 3 tablespoons fresh cream
  • 1 tablespoon chopped fresh coriander leaves 
  • Fresh coriander sprigs for garnish

Method

  1. Heat olive oil in a non-stick pan. Add cumin seeds and let the seeds change colour.  
  2. Add green chillies, mix and sauté for 30 seconds. Add garlic and sauté till it turns light brown. 
  3. Add onions, mix and sauté till it turns translucent. Add curry powder and dried fenugreek leaves and mix well. 
  4. Add mushrooms, mix and cook for a minute. Add salt, mix and cook for 2-3 minutes. 
  5. Add processed cheese and parmesan cheese and mix. Add cream and coriander leaves and mix well. 
  6. Break a little portion on top of each khari to make a cavity, fill in the mushroom mixture and garnish with coriander sprigs. 
  7. Serve immediately garnished with coriander sprig.
