Ingredients for Curried Mushroom Khari Recipe

  • Khari biscuits 16-20

  • Button mushrooms chopped 2 cups

  • Curry powder 1 tablespoon

  • Olive oil 1 tablespoon

  • Cumin seeds 1 teaspoon

  • Green chillies finely chopped 1-2

  • Garlic chopped 1 tablespoon

  • Medium onion finely chopped 1

  • Dried fenugreek leaves (kasuri methi) 1/2 teaspoon

  • Salt to taste

  • Processed cheese grated 2 tablespoons

  • Fresh cream 3 tablespoons

  • Fresh coriander leaves chopped 1 tablespoon

  • Fresh coriander sprig to garnish

Method

Step 1

Heat olive oil in a non-stick pan, add cumin seeds and let their colour change.

Step 2

Add green chillies, mix and sauté for 30 seconds. Add garlic, mix and sauté till it turns light brown.

Step 3

Add onion, mix and sauté till it turns translucent. Add curry powder and dried fenugreek leaves and mix well.

Step 4

Add mushrooms, mix and cook for a minute. Add salt, mix and cook for 2-3 minutes.

Step 5

Add processed cheese and mix. Add cream and coriander leaves and mix well.

Step 6

Break a little portion on top of each khari to make a cavity and place them on a serving platter. Fill the mushroom mixture into the cavities and garnish with coriander sprigs. Serve immediately.
