Ingredients list for Creamy Spinach Pizza
- 1 medium bunch Spinach leaves (palak) shredded
- as required Mozzarella cheese grated
- as required Dough for pizza
- 1 tablespoon Butter
- 1 medium Onion finely chopped
- 2 tablespoon Garlic chopped
- + for dusting Refined flour (maida) 1 tablespoon
- 1 cup Milk
- to taste Salt
- 1 tablespoon Olive oil
- 2-3 tablespoons Pine nuts(chilgoza)
Method
- Preheat oven to 180° C.
- To prepare creamy spinach, heat butter in a non-stick pan. Add onion and sauté till translucent. Add 1 tablespoon garlic and sauté for 30 seconds.
- Add 1 tablespoon flour and sauté for 30 seconds. Add ½ cup milk, mix and cook for 1 minute. Add spinach leaves, mix and cook for 30 seconds. Add remaining milk, mix and cook till mixture thickens. Add salt and mix well.
- Divide the dough into 2 equal portions.
- Dust the worktop with some flour and roll out each portion into ½ cm thick sheet.
- Dust a baking tray with some flour, transfer the sheet on it and dork using a fork.
- Take remaining garlic in a bowl. Add olive oil and mix. Brush the mixture on top of the sheet.
- Put the baking tray in the preheated oven and bake for 5-8 minutes or till light golden. Remove from oven and spread some creamy spinach and mozzarella cheese on top. Sprinkle pine nuts and crushed peppercorns on top.
- Put the baking tray back into the preheated oven and bake till cheese melts.
- Cut into wedges and serve hot.
