Ingredients 

  • 3 medium bunches spinach
  • Oil to deep fry 
  • 1 tablespoon sesame oil (til oil)
  • Salt to taste
  • 1 tablespoon sugar
  • 1 teaspoon crushed red chillies
  • 1 teaspoon toasted sesame seeds (til) 

Method

  1. Trim the stems and use only the spinach leaves. Wash them under running water.Dry well.Stack them one on top of the other, fold and shred finely.
  2. Heat sufficient oil in a wok, add the shredded spinach leaves and deep fry till crisp and dark green. Drain on absorbent paper.
  3. Transfer onto a serving plate. Sprinkle salt, sugar, crushed red chillies and toasted sesame seeds and serve immediately.
