Corn was indigenous to America, but is now grown throughout the world. It is used as a vegetable, briefly boiled or roasted or eaten with butter. And it would also interest you to know that the favourite popcorn, made by popping the small corn kernels, is a wholesome cereal food and is easily digested. Besides this, corn sees its use in various other ways – salads, soups, subzis and even sweets too!

Ingredients for Corn And Spinach Rice Recipe

  • Corn kernels blanched 3/4 cup

  • Fresh spinach leaves (palak) finely shredded 2 medium bunch

  • Cooked basmati rice 2 cups

  • Oil 2 tablespoons

  • Cumin seeds 1/4 teaspoon

  • Ginger-green chilli paste 1 1/2 teaspoons

  • Salt to taste

  • Lemon juice 1 tablespoon

Method

Step 1

Heat the oil in a deep non stick pan. Add the cumin seeds and when they begin to change colour, add the ginger-green chilli paste and sauté for thirty seconds.

Step 2

Add the corn kernels. Mix well and sauté for thirty seconds. Add salt. Add the spinach leaves and toss well. Cook for one minute.
