Coastal cuisine of India loves the coconut. Be it Goan or Malwani, Karnatak, Tamilian or from Kerala, the taste of coconut reigns supreme. Think about a rich fish curry and try making it obliterating the coconut! It will pass off as a fake. Very correctly termed as the ‘plant of life,’ each and every part of the coconut plant is useful in one or the other way.

Ingredients for Coconut Gulaab ki Kheer Recipe

  • Coconut Cream sweetened 200 grams

  • Condensed Milk 1 tablespoon

  • Coconut cream 1 cup

  • Green cardamom powder 1 teaspoon

  • tender coconut flesh ¼ cup

  • Almonds finely chopped 2 tablespoon

  • Pistachios finely chopped 2 tablespoon

  • Desiccated coconut 4-5 tablespoon

  • Rose petals for garnishing

Method

Step 1

Heat condensed milk in a non-stick pan, add coconut cream and green cardamom powder and mix well. Cook on low heat, stirring continuously.

Step 2

Finely chop coconut flesh and add and mix well. Add almonds, pistachios and desiccated coconut and mix well. Cook on low heat for 4-5 minutes.

Step 3

Pour the kheer into a serving bowl. Drizzle rose syrup, garnish with rose petals and serve warm
