Ingredients list for Chocolate lava cookies
- 1 cup Dark chocolate chopped
- 1 cup Fresh cream
- 3/4 cup Cocoa powder
- 1 cup Refined flour
- 1 1/4 cups Butter
- 1 cup Powdered sugar
- 1 teaspoon Vanilla essence
- 3/4 cup Rice flour
- a pinch Salt
Method
- To make ganache, heat cream in a non-stick pan. Add this to the chocolate kept in a bowl and mix well till it melts and is smooth. Refrigerate to set.
- Preheat oven to 180º C.
- Take butter, powdered sugar and vanilla essence in a bowl and whisk well. Sift in together refined flour, rice flour, cocoa powder and salt and mix into a stiff dough.
- Divide the dough into equal portions, stuff each portion with a little ganache and shape into cookies.
- Arrange the cookies on a baking tray, put the tray in the preheated oven and bake for 10-12 minutes.
- Take the tray out of the oven and cool. Serve.
