Ingredients list for Chicken with Pineapple-Cook Smart
- 300 grams Boneless chicken cut into 1/2 inch cubes
- 5 Canned pineapple slices
- 1 tablespo to shallow fry Oil
- 2 Medium cucumbers peeled
- 1 Egg white
- 1 tablespoon Cornflour
- to taste Salt
- 1 inch Ginger
- 2 Fresh red chillies
- 2 tablespoons Castor sugar
- 1 tablespoon Cornflour slurry
- to sprinkle Red chilli flakes
Method
- Heat sufficient oil in a non-stick frying pan.
- Halve cucumber vertically, remove the seeds and cut diagonally into big cubes.
- Put chicken in a bowl, add egg white, cornflour and salt and mix well. Shallow-fry the chicken pieces in hot oil till crisp. Drain on absorbent paper.
- Roughly chop 3 pineapple pieces and grind with 2 tablespoons water to a smooth puree.
- Heat 1 tablespoon oil in a deep non-stick pan. Thinly slice ginger and add to the pan.
- Finely slice red chillies. Cut the remaining pineapple pieces into small cubes.
- Add cucumber to the second pan and toss well. Add pineapple pieces, fried chicken pieces and pineapple puree and mix well. Add red chillies, salt and sugar and mix well.
- Add cornflour slurry and cook for 3-5 minutes.
- Transfer onto a serving platter, sprinkle red chilli flakes and serve immediately.
