Ingredients
- 1 boneless chicken
- 1 pineapple, cut into slices
- 3-4 garlic cloves
- 1 tablespoon oil
- Salt to taste
- 2-3 spring onions with greens
- ¼ cup mayonnaise
- 2 tablespoons tomato ketchup
- A few drops tabasco sauce
- Crushed black peppercorns to taste
Method
- Cut chicken into small cubes. Slice garlic.
- Heat oil in a non-stick pan. Add garlic and sauté till golden. Add chicken cubes, salt, toss well and cook till the chicken is done. Transfer cooked chicken onto a plate and cool to room temperature.
- Slice spring onion bulbs and chop the greens.
- Cut pineapple slices into cubes and place in a bowl. Add spring onion bulbs, mayonnaise, tomato ketchup, Tabasco sauce, crushed peppercorns and salt. Mix well.
- Add some of the spring onion greens and mix well. Add chicken and mix well. Refrigerate to chill.
- Serve chilled garnished with remaining spring onion greens.
