Chicken Pizza

Mixed flour pizza base topped with a delicious tomato sauce, chicken, coloured capsicums and other pizza toppings and baked. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Chicken Pizza

  • 1 cup Chicken grilled, shredded
  • ½ cup Finger millet flour
  • ½ cup Refined flour
  • for dusting Whole wheat flour ½ cup +
  • ½ cup Rolled oats
  • 20 grams Fresh yeast
  • 1 teaspoon Castor sugar
  • to taste Salt
  • 2 tablespoons Olive oil
  • 1 medium Onion chopped
  • 4-5 Garlic cloves chopped
  • 1 inch Celery chopped
  • 1 cup Tomato concasse
  • to taste Crushed black peppercorns
  • 1 teaspoon Dried oregano
  • 6-8 Basil leaves
  • 1 small Green capsicum cut into strips
  • 1 small Red capsicum cut into strips
  • 1 small Yellow capsicum cut into strips
  • 1 medium Onion sliced
  • 1-2 Pickled jalapenos sliced
  • 3-4 Black olives sliced
  • 15 grams Mozzarella cheese cut into small cubes
  • 1 teaspoon Red chilli flakes


  1. Take the yeast in a bowl. Add castor sugar and some water, mix and set aside to activate.
  2. Mix together finger millet flour, refined flour, wheat flour and oats in a bowl.
  3. Add the activated yeast and mix well. Add sufficient water and knead. Add salt and 1 tablespoon olive oil and knead into soft dough. Set aside to prove for 10-15 minutes.
  4. Preheat oven at 200º C.
  5. Heat remaining olive oil in a non-stick pan. Add onion, garlic and celery and sauté till the onion turns translucent.
  6. Add tomato concasse, mix well and cook for a minute. Add salt, crushed peppercorns and little water, mix and cook on low heat for 10-15 minutes.
  7. Place the proved dough on the worktop and knock back to release the excess air. Dust with some wheat flour and roll out into a medium size thick disc.
  8. Place the prepared base on a baking tray and prick all over with a fork. Place the tray in the preheated oven and bake for 8-10 minutes.
  9. Add oregano and 3-4 torn basil leaves in the sauce and mix well.
  10. Spread the sauce evenly on the baked base. Top with chicken, green, red and yellow capsicum strips, sliced onion, jalapenos, olives, cheese cubes, remaining torn basil leaves and chilli flakes. Put the tray in the oven and bake at 180º C for 10-12 minutes.
  11. Serve.
