Ingredients
- 2 grilled chicken breasts
- 2-3 peaches , halved, seeded and cut into wedges
- 1/2 cup green gram , sprouted
- 1//2 cup moth , sprouted
- 10-12 baby spinach leaves
- 1 medium white onion , sliced
Dressing
- 2-3 teaspoons dijon mustard paste
- 1 teaspoon chopped fresh mixed herbs
- Salt to taste
- 1 teaspoon red chilli flakes
- Black pepper powder to taste
- 1 tablespoon vinegar
- 2-3 tablespoons olive oil
Method
- Put grilled chicken breasts in a bowl and shred. Add peaches, sprouted green gram, sprouted moth, baby spinach leaves and onion.
- To prepare dressing, take Dijon mustard paste in a jar, add fresh mixed herbs, salt, chilli flakes, pepper powder, vinegar and olive oil and blend with an electric hand blender into a smooth mixture.
- Add the dressing to the salad mixture and mix well.
- Transfer the salad into a serving platter and serve immediately.
