Ingredients list for Chettinaad Fried Chicken

  • 800 grams Chicken cut into 8 pieces
  • 6 Dried red chillies broken
  • 1 inch piece Ginger roughly chopped
  • 5 cloves Garlic
  • 4 Green chillies roughly chopped
  • 2 medium Onions roughly chopped
  • 15 Curry leaves
  • to taste Salt
  • 1/2 teaspoon Turmeric powder
  • 2 tablespoons Rice flour
  • 2 tablespoons Oil
  • 1 tablespoon Lemon juice

Method

  1. Grind together red chillies, ginger, garlic, green chillies, onions and curry leaves with sufficient water to a smooth paste. Mix together chicken, salt, turmeric powder, ground paste and rice flour in a bowl. Keep the bowl in a refrigerator to marinate f
  2. Add lemon juice to the marinated chicken and mix well. Place chicken pieces on the pan in a single layer, ensuring that they do not stick to each other. Cover and cook on medium heat till chicken is almost done.
  3. Turn over chicken pieces and add the leftover marinade and mix well. Cover and cook on medium heat for 5-7 minutes more. Serve hot.
