Available in various types, shapes and sizes, these edible fungi (purely vegetarian!) are a great way to glam-up your dishes. Talking about the types, there are – button, enoki, morel, oyster, shiitake, porcini, chanterelle and portabella. Buy the ones with a firm texture and even colour with tightly-closed caps. If the gills are showing, it is an indication of age and they are probably past their prime.

Ingredients for Cheesy Stuffed Mushrooms Recipe

  • Button mushrooms 12-16 medium

  • Oil 1 tablespoon + to deep fry

  • Garlic cloves chopped 10-12

  • onions chopped 2 medium

  • Green chillies chopped 3-4

  • Fresh coriander leaves chopped ¼ cup

  • Salt to taste

  • Black pepper powder to taste

  • Processed cheese 1¼ cups

  • Refined flour (maida) sieved ¾ cup

  • Bread crumbs 2-3 cups


Step 1

Remove stems from mushrooms and chop them. Make a cavity in each mushroom cap with the tip of a knife. Set aside.

Step 2

Heat one tablespoon oil in a pan. Add garlic and onions sauté till translucent. Add chopped mushroom stems and green chillies. Cook until all the moisture evaporates.

Step 3

Add coriander leaves, salt and black pepper powder. Sauté for a minute. Remove from heat and add cheese and mix.

Step 4

Stuff the mushrooms caps with this mixture.

Step 5

Take refined flour in a bowl. Add sufficient water to make a batter of coating consistency. Add salt to taste.

Step 6

Spread the breadcrumbs in a plate. Heat sufficient oil in a kadai.

Step 7

Dip the mushrooms in the batter and then roll in the breadcrumbs to coat evenly. Repeat the procedure once again.

Step 8

Deep-fry till golden brown. Drain and place them on an absorbent paper.

Step 9

Cut into two and serve hot with tomato ketchup.
