Ingredients
- 50 grams processed cheese
- 25-30 spinach leaves, blanched, drained thoroughly, cooled and chopped
- ½ cup American corn kernels, boiled
- 8 white bread slices
- 2 tablespoons butter
- 2 tablespoons refined flour (maida)
- 1 cup milk
- Salt to taste
- Black peppercorns crushed to taste
- Olive oil for drizzling
- Red capsicum curls to garnish
- Microgreens to garnish
Method
- Heat butter in a non-stick pan till it melts. Add refined flour, mix and saute for 2-3 minutes or till the colour changes to a light golden.
- Add milk, a little at a time, stir well so that there are no lumps and cook till the sauce thickens.
- Add corn kernels and spinach and mix well. Add salt and crushed black peppercorns and mix well.
- Transfer the mixture into a bowl and stir well. Grate processed cheese into the bowl and mix well.
- For each sandwich, spread the mixture generously on one bread slice and cover it with another slice.
- Heat a sandwich griller. Drizzle a little oil over each sandwich and place it in the griller, close it and grill till they are golden and grill marks appear on both sides.
- Cut each sandwich into 2 equal pieces, place them on a serving platter, garnish with red capsicum curls and microgreens and serve hot.
