This khichdi is proof that the simplest things are often the best. A super healthy medley of rice and four types of dal – this one gets ready in minutes. All you need is some achar and papad to go with it.

How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Char Dal Ni Khichdi Recipe

  • Rice soaked 3/4 cup

  • Split pigeon pea (toor dal/arhar dal) soaked 1 1/2 tablespoons

  • Split red lentil (masoor dal) soaked 1 1/2 tablespoons

  • Split green gram skinless (dhuli moong dal),soaked 3 tablespoons

  • Split field beans (val ki dal) soaked 1 1/2 tablespoons

  • Desi ghee 3 tablespoons

  • Cinnamon 1 inch stick

  • Black cardamom 1

  • Cloves 3-4

  • Onions sliced 2 medium

  • Fresh coriander leaves 1/4 bunch

  • Fresh mint leaves 10-15

  • Ginger 1 inch piece

  • Buttermilk 1/2 cup

  • Sea salt to taste

  • Turmeric powder 1/4 teaspoon


Step 1

Heat desi ghee in a pressure cooker, add cinnamon, black cardamom, cloves and onions and saute. Grind coriander leaves, mint leaves, ginger and buttermilk till smooth.

Step 2

Add field beans, pigeon pea, split lentils and green gram to the cooker and mix. Add rice and mix. Add sea salt, turmeric powder and spiced buttermilk and mix. Add 3½ cups water and mix.

Step 3

When the mixture comes to a boil, cover the cooker and cook under pressure till 3-4 whistles are given out. Serve hot.
