Ingredients list for Cauliflower and Pear Muffins
- 1/2 medium Cauliflower finely chopped
- 1 1/2 medium Pears peeled and finely chopped
- 1 cup + ½ tablespoon Butter
- 1/4 cup brown sugar/jaggery
- 1 cup Castor sugar (caster sugar)
- 4 Eggs
- 1 teaspoon Vanilla essence
- 1 cup Refined flour (maida)
- 1 teaspoon Baking powder
- 1 teaspoon Green cardamom powder
Method
- Preheat oven to 180ºC.
- Heat half tablespoon butter in a non-stick pan, add pears and cauliflower, mix well and cook for five to ten minutes.
- Add brown sugar, mix and cook till the sugar melts. Remove from heat and set aside to cool.
- Cream together one cup butter and castor sugar in a bowl till light and fluffy. Add eggs, one at a time, and vanilla essence and beat well.
- Sieve together refined flour, baking powder and cardamom powder into the butter-sugar mixture and fold till well combined.
- Divide the batter equally into silicon muffin moulds, place the moulds in the preheated oven and bake for twenty-five to thirty minutes. Remove from oven and cool.
- Remove from moulds and serve.
