Ingredients list for Carrot Muffins

  • 250 grams Carrots grated
  • 155 grams Refined flour (maida)
  • 8 grams Baking soda
  • 10-12 Almonds slivered
  • 2 Eggs
  • 175 grams brown sugar/jaggery
  • 200 millilitres Oil
  • Butter icing
  • 125 grams Butter
  • 125 grams Icing sugar


  1. Preheat oven at 180°C.
  2. Sift together the refined flour and baking soda into a bowl. Add carrot and almonds, mix well and set aside.
  3. Beat together eggs and brown sugar in another bowl till creamy.
  4. Add carrot mixture, little by little, and fold in lightly.
  5. Add oil and mix well. Pour batter into muffin moulds arranged on a baking tray filling till 3/4th.
  6. Place tray in preheated oven and bake for 20-30 minutes. Remove from heat and set aside to cool.
  7. To make butter icing, sift icing sugar in a bowl. Add butter and cream them with a hand blender till light and fluffy.
  8. Pour icing in a piping bag and place muffins on a serving platter. Decorate muffins with butter icing and serve.
