Ingredients list for Carrot Muffins
- 250 grams Carrots grated
- 155 grams Refined flour (maida)
- 8 grams Baking soda
- 10-12 Almonds slivered
- 2 Eggs
- 175 grams brown sugar/jaggery
- 200 millilitres Oil
- Butter icing
- 125 grams Butter
- 125 grams Icing sugar
Method
- Preheat oven at 180°C.
- Sift together the refined flour and baking soda into a bowl. Add carrot and almonds, mix well and set aside.
- Beat together eggs and brown sugar in another bowl till creamy.
- Add carrot mixture, little by little, and fold in lightly.
- Add oil and mix well. Pour batter into muffin moulds arranged on a baking tray filling till 3/4th.
- Place tray in preheated oven and bake for 20-30 minutes. Remove from heat and set aside to cool.
- To make butter icing, sift icing sugar in a bowl. Add butter and cream them with a hand blender till light and fluffy.
- Pour icing in a piping bag and place muffins on a serving platter. Decorate muffins with butter icing and serve.
