Ingredients list for Cake
- + for dusting Refined flour (maida) 1 cup
- for greasing Butter 1 cup +
- 1 cup Castor sugar (caster sugar)
- 2 eggs
- 1 teaspoon Baking powder
- 1 tablespoon Almonds sliver
- 1 tablespoon Pistachios chopped
- 1½ tablespoons Raisins
- ½ cup Oats
- 1 cup Mixed fruits pulp (pineapple, apples, kiwis and oranges)
- ¼ cup Mixed Fruit Juice (pineapple, apples, kiwis and oranges)
Method
- Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.
- Cream together butter and castor sugar in a bowl with an electric beater. Break in eggs, one by one, and whisk well.
- Sieve together flour and baking powder into another bowl. Add almond slivers, pistachios and raisins and mix. Add oats and mix well.
- Fold mixed fruit pulp and flour mixture gradually into the egg mixture. Add mixed fruit juice and mix well.
- Pour the batter into the greased loaf tin and tap.
- Place the tin in the preheated oven and bake for 30-35 minutes. Remove from oven, cool and demould.
- Slice and serve.
