Ingredients list for Cake

  • + for dusting Refined flour (maida) 1 cup
  • for greasing Butter 1 cup +
  • 1 cup Castor sugar (caster sugar)
  • 2 eggs
  • 1 teaspoon Baking powder
  • 1 tablespoon Almonds sliver
  • 1 tablespoon Pistachios chopped
  • 1½ tablespoons Raisins
  • ½ cup Oats
  • 1 cup Mixed fruits pulp (pineapple, apples, kiwis and oranges)
  • ¼ cup Mixed Fruit Juice (pineapple, apples, kiwis and oranges)


  1. Preheat oven to 180° C. Grease a loaf tin with some butter and dust with some flour.
  2. Cream together butter and castor sugar in a bowl with an electric beater. Break in eggs, one by one, and whisk well.
  3. Sieve together flour and baking powder into another bowl. Add almond slivers, pistachios and raisins and mix. Add oats and mix well.
  4. Fold mixed fruit pulp and flour mixture gradually into the egg mixture. Add mixed fruit juice and mix well.
  5. Pour the batter into the greased loaf tin and tap.
  6. Place the tin in the preheated oven and bake for 30-35 minutes. Remove from oven, cool and demould.
  7. Slice and serve.
