Ingredients
- 1 tablespoon curry powder
- 2 cups chopped button mushrooms
- 16-20 kharis
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds (jeera)
- 1-2 green chillies, finely chopped
- 1 tablespoon chopped garlic
- 1 medium onion, finely chopped
- ½ teaspoon dried fenugreek leaves (kasuri methi)
- Salt to taste
- 2 tablespoons grated processed cheese
- 2 tablespoons grated parmesan cheese
- 3 tablespoons fresh cream
- 1 tablespoon chopped fresh coriander leaves
- Fresh coriander sprigs for garnish
Method
- Heat olive oil in a non-stick pan. Add cumin seeds and let the seeds change colour.
- Add green chillies, mix and sauté for 30 seconds. Add garlic and sauté till it turns light brown.
- Add onions, mix and sauté till it turns translucent. Add curry powder and dried fenugreek leaves and mix well.
- Add mushrooms, mix and cook for a minute. Add salt, mix and cook for 2-3 minutes.
- Add processed cheese and parmesan cheese and mix. Add cream and coriander leaves and mix well.
- Break a little portion on top of each khari to make a cavity, fill in the mushroom mixture and garnish with coriander sprigs.
- Serve immediately garnished with coriander sprig.
