Ingredients
- 5 eggs
- 4 buns
- 2 large onions
- 2 medium tomatoes
- 4 tablespoons oil
- Salt to taste
- 2-3 fresh coriander sprigs
- 1 teaspoon red chilli powder
- 4 tablespoons tomato ketchup
- 2 teaspoons red chilli sauce
- 1 spring onion greens, cut into thin strips
Method
- Heat 2 tablespoons in each of 2 non-stick pans.
- Slice the onion and put it in one pan and saute.
- Cut the tomato roughly. Break the eggs into a bowl, add salt and beat well.
- Chop coriander sprigs finely and add to the egg mixture along with ½ teaspoon red chilli powder and beat well.
- Halve the buns horizontally, dip each half in the egg mixture and add to the 2nd pan and cook, turning sides, till they turn evenly golden brown.
- When the onions in the 1st pan turn golden, add tomato and mix well. Add tomato ketchup and mix well. Add salt, remaining red chilli powder and red chilli sauce, mix well and cook for 1-2 minutes or the mixture becomes pulpy.
- Place the French toasts on serving plates, spread the tomato mixture over each of them, garnish with spring onion green strips and serve immediately.
