Ingredients list for Brownie Cupcakes
- 100 grams Cocoa powder
- 220 grams Refined flour (maida)
- 1 teaspoon Baking soda
- 1 teaspoon Baking powder
- 240 grams Butter
- 400 grams Condensed milk
- 1 1/2 teaspoons Vanilla essence
- ½ cup + for garnishing Walnuts chopped
- ½ cup + for garnishing Chocolate chips
- 3/4 cup Buttermilk
Method
- Preheat oven at 180°C.
- Sift together refined flour, cocoa powder, baking soda and baking powder into a bowl and mix well. Set aside.
- Cream together butter and condensed milk in another bowl with an electric beater till light. Add vanilla essence and beat well.
- Add walnuts and chocolate chips to the flour mixture and mix well.
- Add the flour mixture to the butter-condensed milk mixture and fold till well blended. Add buttermilk and mix well.
- Put the batter into a piping bag and pipe out into individual silicon cupcake moulds. Garnish with chopped walnuts and chocolate chips.
- Place the moulds on a baking tray and put in the preheated oven. Bake for 30 minutes.
- Remove from oven, cool and demould. Serve warm.
