Ingredients list for Brown Bread Ice Cream

  • 3 Brown bread slices
  • 1 tablespoon Butter
  • 1 cup Castor sugar (caster sugar)
  • to taste Salt
  • ¼ teaspoon Cinnamon powder
  • 250 millilitres Milk
  • 375 millilitres Fresh cream
  • 3 Egg yolks
  • 1 teaspoon Vanilla essence
  • ¼ cup brown sugar/jaggery
  • 1½ cups Cream cheese

Method

  1. Trim off the edges of bread slices and cut into small cubes.
  2. Heat butter in a small deep non-stick pan. Add bread cubes, mix and cook for 1 minute. Add ½ cup castor sugar, mix and cook till sugar melts.
  3. Add salt and cinnamon powder, mix and cook for 1 minute. Transfer onto a baking tray.
  4. Place the baking tray in the preheated oven and bake for 10-15 minutes.
  5. Heat milk in another small deep non-stick pan. Add cream, mix and bring the mixture to boil.
  6. Take yolks in a bowl. Add vanilla essence, brown sugar and remaining castor sugar and whisk well.
  7. Add ½ the milk-cream mixture and whisk well. Transfer the mixture into the remaining milk-cream mixture pan and turn on the heat. Whisk and cook till it thickens.
  8. Take cream cheese in a bowl and mix to get a smooth texture. Strain into the prepared milk-cream mixture, mix well and cooldown to room temperature.
  9. Blend the milk-cream mixture till smooth. Pour into an air-tight container, put baked bread cubes on top and cover. Freeze till set.
  10. Serve.
