By Sanjeev Kapoor 13 Feb 2017 in Recipes Course New Update Advertisment Main Ingredients Brown bread slices, Butter Cuisine Fusion Course Desserts Prep Time 7-8 hour Cook time 26-30 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Brown Bread Ice Cream 3 Brown bread slices 1 tablespoon Butter 1 cup Castor sugar (caster sugar) to taste Salt ¼ teaspoon Cinnamon powder 250 millilitres Milk 375 millilitres Fresh cream 3 Egg yolks 1 teaspoon Vanilla essence ¼ cup brown sugar/jaggery 1½ cups Cream cheese Method Trim off the edges of bread slices and cut into small cubes. Heat butter in a small deep non-stick pan. Add bread cubes, mix and cook for 1 minute. Add ½ cup castor sugar, mix and cook till sugar melts. Add salt and cinnamon powder, mix and cook for 1 minute. Transfer onto a baking tray. Place the baking tray in the preheated oven and bake for 10-15 minutes. Heat milk in another small deep non-stick pan. Add cream, mix and bring the mixture to boil. Take yolks in a bowl. Add vanilla essence, brown sugar and remaining castor sugar and whisk well. Add ½ the milk-cream mixture and whisk well. Transfer the mixture into the remaining milk-cream mixture pan and turn on the heat. Whisk and cook till it thickens. Take cream cheese in a bowl and mix to get a smooth texture. Strain into the prepared milk-cream mixture, mix well and cooldown to room temperature. Blend the milk-cream mixture till smooth. Pour into an air-tight container, put baked bread cubes on top and cover. Freeze till set.
