Ingredients
- 1 medium broccoli, separated into florets and blanched
- 15-20 almonds, blanched and peeled
- Juice of 1 lemon
- Salt to taste
- Crushed black peppercorns to taste
- 2 teaspoons olive oil
Method
- For dressing, take lemon juice in a bowl. Add salt and crushed peppercorns. Add olive oil slowly and keep whisking.
- Cut almonds into halves.
- Heat a non-stick pan. Add almonds and roast till light golden. Remove from heat and cool to room temperature.
- Add dressing to broccoli florets and toss. Transfer in a serving bowl.
- Add roasted almonds on top and serve immediately.
