Bread Salad With Roasted Onions

Ingredients 

  • 1 brown bread slice, cut into1 inch cubes
  • 1 medium green capsicum 1 inch cubes
  • 2 medium onions
  • 2 medium tomatoes, seeded 1 inch cubes
  • 1 small iceberg lettuce, hand torn

For dressing

  • 2 tablespoons vinegar
  • Salt to taste
  • 5-6 black peppercorns, crushed
  • 6 small pickled gherkins, chopped
  • 1 teaspoon dried rosemary
  • 1/4 teaspoon mixed herbs

For garnishing

  • 2 tablespoons brown bread crumbs

Method

  1. Roast onions over direct flame. Cut them into one-inch square pieces. For dressing mix together vinegar, salt, crushed black peppercorns, pickled gherkins, rosemary and mixed herbs and set aside.
  2. Mix together bread cubes, capsicum, onions, tomatoes and iceberg lettuce in a bowl. Just before serving add the dressing. Garnish with toasted brown bread crumbs and serve immediately.
