Ingredients
- 1 brown bread slice, cut into1 inch cubes
- 1 medium green capsicum 1 inch cubes
- 2 medium onions
- 2 medium tomatoes, seeded 1 inch cubes
- 1 small iceberg lettuce, hand torn
For dressing
- 2 tablespoons vinegar
- Salt to taste
- 5-6 black peppercorns, crushed
- 6 small pickled gherkins, chopped
- 1 teaspoon dried rosemary
- 1/4 teaspoon mixed herbs
For garnishing
- 2 tablespoons brown bread crumbs
Method
- Roast onions over direct flame. Cut them into one-inch square pieces. For dressing mix together vinegar, salt, crushed black peppercorns, pickled gherkins, rosemary and mixed herbs and set aside.
- Mix together bread cubes, capsicum, onions, tomatoes and iceberg lettuce in a bowl. Just before serving add the dressing. Garnish with toasted brown bread crumbs and serve immediately.
