Cut them into one-inch square pieces. For dressing mix together vinegar, salt, crushed black peppercorns, pickled gherkins, rosemary and mixed herbs and set aside. Mix together bread cubes, capsicum, onions, tomatoes and iceberg lettuce in a bowl. Just before serving add the dressing. Garnish with toasted brown bread crumbs and serve immediately.
