Ingredients for Bread Salad With Roasted Onions Recipe

  • Brown bread 1 inch cubes 1 slice

  • Green Capsicum 1 inch cubes 1 medium

  • Onions 2 medium

  • Tomatoes seeded 1 inch cubes 2 medium

  • Iceberg lettuce hand torn 1 small

  • For dressing

  • Vinegar 2 tablespoons

  • Salt to taste

  • Black peppercorns crushed 5-6

  • Pickled gherkins chopped 6 small

  • Dried rosemary 1 teaspoon

  • Mixed herbs 1/4 teaspoon

  • For garnishing

  • Brown bread crumbs 2 tablespoons


Step 1

Roast onions over direct flame. Cut them into one-inch square pieces. For dressing mix together vinegar, salt, crushed black peppercorns, pickled gherkins, rosemary and mixed herbs and set aside.

Step 2

Mix together bread cubes, capsicum, onions, tomatoes and iceberg lettuce in a bowl. Just before serving add the dressing. Garnish with toasted brown bread crumbs and serve immediately.
