Ingredients list for Berries and Oat Walnut Muffins
- 1/2 cup Mixed berries
- 3/4 cup Oats
- 1/4 cup Walnuts chopped roasted
- 1/2 cup Refined flour (maida)
- 1/2 cup Butter
- 1/2 cup Castor sugar (caster sugar)
- 1/2 cup brown sugar/jaggery powdered
- 2 Eggs
- 1 teaspoon Vanilla essence
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- 1/2 cup Milk
Method
- Preheat oven at 180° C. Line individual silicon muffin moulds with paper cupcake moulds.
- Cream together butter, castor sugar and brown sugar in a bowl. Add eggs and mix. Add vanilla essence, mixed berries, walnuts and oats and mix well.
- Sieve in flour, baking powder and baking soda and fold well.
- Fill in ¾ of each lined silicon muffin moulds with prepared berries-oats mixture and tap.
- Put the prepared silicon muffin moulds on a baking tray. Place the baking tray in preheated oven and bake for 25-30 minutes.
- Demould and serve.
