Ingredients list for Beer Batter Fried Asparagus

  • 1 tin Beer
  • 8 Stick Asparagus
  • to deep fry Oil
  • 3/4 cup Refined flour (maida)
  • 1/4 cup Cornflour/ corn starch
  • 1 teaspoon Lemon zest
  • to taste Salt
  • 1/4 teaspoon Black peppercorns
  • 1/2 cup Mayonnaise
  • 1 teaspoon Lemon juice


  1. Heat sufficient oil in a kadai. Take chilled flour in a bowl, add cornflour, ¼ tsp lemon zest, salt, a little crushed black peppercorns and sufficient beer and whisk to make a smooth batter of thick consistency.
  2. Dip asparagus in the batter and slide into hot oil. Deep fry on medium heat.
  3. Add a little of remaining lemon zest, crushed peppercorns, salt and lemon juice to mayonnaise and mix well.
  4. Drain asparagus when lightly browned, place on tissue paper; dab to remove excess oil.
  5. Sprinkle remaining lemon zest and crushed peppercorns and serve hot with mayonnaise dip.
