Ingredients list for Beer Batter Fried Asparagus
- 1 tin Beer
- 8 Stick Asparagus
- to deep fry Oil
- 3/4 cup Refined flour (maida)
- 1/4 cup Cornflour/ corn starch
- 1 teaspoon Lemon zest
- to taste Salt
- 1/4 teaspoon Black peppercorns
- 1/2 cup Mayonnaise
- 1 teaspoon Lemon juice
Method
- Heat sufficient oil in a kadai. Take chilled flour in a bowl, add cornflour, ¼ tsp lemon zest, salt, a little crushed black peppercorns and sufficient beer and whisk to make a smooth batter of thick consistency.
- Dip asparagus in the batter and slide into hot oil. Deep fry on medium heat.
- Add a little of remaining lemon zest, crushed peppercorns, salt and lemon juice to mayonnaise and mix well.
- Drain asparagus when lightly browned, place on tissue paper; dab to remove excess oil.
- Sprinkle remaining lemon zest and crushed peppercorns and serve hot with mayonnaise dip.
