Ingredients for Banana and Walnut Muffins Recipe

  • Banana 2

  • Walnuts 50 grams

  • Whole wheat flour 150 grams

  • Butter 50 grams

  • Sugar 50 grams

  • Egg 1

  • Baking powder 1 tablespoon

  • Oats flour 50 grams

  • Milk 200 millilitres

  • Oats 1 tablespoon

Method

Step 1

Preheat oven at 180ºC.

Step 2

Crush walnuts coarsely and transfer into a bowl.

Step 3

Peel, break bananas and place in a crusher. Crush finely.

Step 4

Cream butter and sugar in another bowl till light. Add crushed bananas and mix well. Add egg and mix well till smooth.

Step 5

Sift together wheat flour and baking powder into the bowl and fold nicely.

Step 6

Add oats flour, milk and mix well till well blended into a smooth batter. Add half the crushed walnuts and mix well.

Step 7

Pour batter into individual silicon muffin moulds, tap a little and place in a baking pan.

Step 8

Add oats to the remaining crushed walnuts and mix well. Top the muffin batter with it, place pan in the preheated oven and bake for 25-30 minutes.

Step 9

Remove from heat, cool and demould. Serve.
