Ingredients list for Banana and Walnut Muffins

  • 2 Banana
  • 50 grams Walnuts
  • 150 grams Whole wheat flour
  • 50 grams Butter
  • 50 grams Sugar
  • 1 Egg
  • 1 tablespoon Baking powder
  • 50 grams Oats flour
  • 200 millilitres Milk
  • 1 tablespoon Oats


  1. Preheat oven at 180ºC.
  2. Crush walnuts coarsely and transfer into a bowl.
  3. Peel, break bananas and place in a crusher. Crush finely.
  4. Cream butter and sugar in another bowl till light. Add crushed bananas and mix well. Add egg and mix well till smooth.
  5. Sift together wheat flour and baking powder into the bowl and fold nicely.
  6. Add oats flour, milk and mix well till well blended into a smooth batter. Add half the crushed walnuts and mix well.
  7. Pour batter into individual silicon muffin moulds, tap a little and place in a baking pan.
  8. Add oats to the remaining crushed walnuts and mix well. Top the muffin batter with it, place pan in the preheated oven and bake for 25-30 minutes.
  9. Remove from heat, cool and demould. Serve.
