Banana Yogurt Muffins Bananas and yogurt give these muffins a healthy touch. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 10 Feb 2017 in Recipes Course New Update Main Ingredients Bananas, Yogurt Cuisine Fusion Course Snacks and Starters Prep Time 26-30 minutes Cook time 16-20 minutes Serve 4 Taste Sweet Level of Cooking Easy Others Non Veg Ingredients list for Banana Yogurt Muffins 2 Bananas 1 cup Yogurt 1¾ cups Refined flour (maida) ½ cup Butter ½ cup Castor sugar (caster sugar) 1 Egg beaten 1 teaspoon Vanilla essence ½ teaspoon Baking soda ¼ cup Chocolate chips Method Preheat oven to 180ºC. Cream together butter and sugar in a bowl till light and fluffy. Add egg and vanilla essence and beat till well incorporated. Sift together the flour and baking soda in another bowl. Add chocolate chips and mix. Add the flour mixture and yogurt to the butter-sugar mixture and beat well. Peel and roughly chop bananas and add to the bowl. Beat again to make a smooth batter. Spoon the batter into individual muffin moulds upto ¾ full, place them on a baking tray, place the tray in the preheated oven and bake for 15-20 minutes. Remove from oven and cool.
