Banana Nut Loaf

Bananas and Hazelnut flavoured sweet loaf – tastes great with cups of hot chocolate milk. This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Banana Nut Loaf

  • 3 Bananas
  • + for dusting Refined flour (maida) 1½ cups
  • ½ cup Hazelnuts roasted and chopped
  • ½ cup Castor sugar (caster sugar)
  • + for greasing Butter ½ cup
  • 2 Eggs
  • 1 teaspoon Vanilla essence
  • ½ cup Chocolate hazelnut spread
  • 1½ teaspoons Baking powder
  • a pinch Salt
  • ¼ cup Milk


  1. Preheat oven at 180ºC. Grease a loaf tin with some butter and dust with some flour.
  2. Cream together castor sugar and butter in a bowl till light and fluffy. Add eggs, one by one, and beat well. Add vanilla essence and whisk well.
  3. Peel, mash bananas and add in the bowl. Mix well. Add chocolate-hazelnut spread and mix well.
  4. Sift together flour, baking powder and salt into the bowl and fold lightly. Add milk and mix well.
  5. Reserve some hazelnuts and add the remaining to the bowl and mix well into a batter.
  6. Pour the batter into the prepared loaf tin, tap a little and top with the reserved nuts. Put the tin in the preheated oven and bake for 25-30 minutes.
  7. Remove from heat and cool to room temperature. Remove from mould and cut into slices.
  8. Serve.
