Ingredients list for Banana Coconut Loaf
- 3 large Ripe bananas peeled and mashed
- 2 cups Desiccated coconut
- ½ cup + for greasing Butter
- ½ cup Honey
- 1 cup + for dusting Refined flour (maida)
- 1 teaspoon Baking powder
- 4 Eggs
- Zest of 2 lemons
- to taste Salt
Method
- Preheat oven to 180°C. Grease a loaf tin with some butter and dust with some flour.
- Heat a non-stick pan. Add honey and butter, mix and let the butter melt. Transfer into a bowl.
- Add bananas, desiccated coconut, flour, baking powder, melted honey-butter mixture, eggs, lemon zest and salt and mix till well combined.
- Pour the prepared mixture into the lined tin, place the tin in the preheated oven and bake for 1 hour. Remove from oven, cool and demould.
- Slice and serve.
