Ingredients list for Balushahi
- 1 1/2 cups Refined Flour
- 2/3 cup + to deep fry Yogurt
- 1/4 teaspoon Soda bicarbonate
- 8 tablespoons Yogurt beaten
- 2 cups Sugar
- 2 tablespoons Milk
- 4-5 Pistachios finely chopped
Method
- Place the refined flour in a bowl. Add soda bicarbonate and mix.
- Add two third cup olive oil and mix. Add yogurt and mix.
- Add a little milk and knead into a soft dough.
- Rest the dough for forty five minutes.
- Heat together sugar and one cup of water till it reaches a two-string consistency.
- . Midway through add milk and when the scum rises to the surface remove and discard.
- Divide the dough into equal lemon sized portions and shape into smooth balls.
- Make a slight dent in the centre with your thumb and rest the balls for a few minutes.
- Heat sufficient olive oil in a kadai.
- When the oil is medium hot, gently slide in the balls and deep fry on low heat till golden.
- Drain and place them on a plate.
- Drizzle the syrup on the balushahis.
- Garnish with pistachios and serve when cooled.
