Ingredients for Baked Stuffed Chilli Recipe

  • Green Chillies 12 large

  • Potatoes boiled, peeled, mashed 3 tablespoons

  • Onion chopped 2 tablespoons

  • Mushrooms chopped 3 tablespoons

  • Roasted peanuts crushed 3 tablespoons

  • Mozzarella cheese grated 3 tablespoons

  • Black pepper powder 1/2 teaspoon

  • Fresh coriander leaves chopped 1/4 cup

  • Salt to taste

  • Olive oil 3-4 tablespoons

Method

Step 1

Slit the chillies on one side, remove seeds. Mix together potato, onion, mushrooms, crushed peanuts, mozzarella cheese, black pepper powder, coriander leaves and salt.

Step 2

Stuff this into the chillies and arrange them in an ovenproof dish. Drizzle olive oil over them and bake them at 180°C for ½ hour. Serve hot.
