Ingredients list for Baked Stuffed Chilli

  • 12 large Green Chillies
  • 3 tablespoons Potatoes boiled, peeled, mashed
  • 2 tablespoons Onion chopped
  • 3 tablespoons Mushrooms chopped
  • 3 tablespoons Roasted peanuts crushed
  • 3 tablespoons Mozzarella cheese grated
  • 1/2 teaspoon Black pepper powder
  • 1/4 cup Fresh coriander leaves chopped
  • to taste Salt
  • 3-4 tablespoons Olive oil

Method

  1. Slit the chillies on one side, remove seeds. Mix together potato, onion, mushrooms, crushed peanuts, mozzarella cheese, black pepper powder, coriander leaves and salt.
  2. Stuff this into the chillies and arrange them in an ovenproof dish. Drizzle olive oil over them and bake them at 180°C for ½ hour. Serve hot.
