History of Indian cuisine dates back to nearly 5,000-years ago when various groups and cultures interacted with India that led to a diversity of flavours and regional cuisines.
Indian cuisine comprises of a number of regional cuisines.  The diversity in soil type, climate, culture, ethnic group and occupations, these cuisines differ from each other mainly due to the use of locally available spices, herbs, vegetables and fruits. Indian food is also influenced by religious and cultural choices and traditions. 
Foreign invasions, trade relations and colonialism had introduced certain foods to the country like potato, chillies and breadfruit.

Ingredients for Baked Palak Paneer Recipe

  • Blanched spinach puree 1 cup

  • Cottage cheese cut into cubes 1/2 cup

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Garlic finely chopped 2 teaspoons

  • Medium onion finely chopped 1

  • Salt to taste

  • Green chillies finely chopped 2-3

  • Mozzarella cheese 100 grams

  • Garam masala powder 1 teaspoon to sprinkle

  • Fresh cream 2 tablespoons

  • Green capsicum cut into thin strips for garnishing

Method

Step 1

Preheat oven to 180º C.

Step 2

Heat oil in a non-stick pan, add cumin seeds and garlic and sauté till the garlic turns golden. Add onion and sauté further till the onion becomes soft. Add spinach puree and mix well. Add salt and mix well. Add green chillies and mix well and cook for 2-3 minutes.

Step 3

Cut mozzarella cheese into small cubes and put them in a bowl.

Step 4

Add garam masala powder to the spinach mixture and mix well.

Step 5

Add cottage cheese cubes, salt and fresh cream to the mozzarella cheese cubes and mix well.

Step 6

Spread the spinach mixture in a baking dish, Spread mozzarella cheese-cottage cheese mixture over it, sprinkle garam masala powder, keep the dish in the preheated oven and bake for 15 minutes.

Step 7

Remove the dish from oven, garnish with capsicum strips and serve immediately.
